Summer Dill Catfish
A Simple Rustic Meal with a Zing You'll Love!
When I think of summer time, I think of nights by the river or lake fishing for catfish, and the wonderful fish fry come the following day. A good thing about summertime is the plethora of fresh vegetables and herbs that are available in the local farm markets or even in our own backyards. For me, nothing compliments fresh caught fish more then a little bit of fresh tangy dill grown right in my back yard. This isn't your every day fried fish, but the simplicity and taste is surely something to be desired. Though I call it summer time dill catfish any firm flaky fish will do and often I have done this using other fish like white bass or wiper.
Perfect with a big old glass of sun-tea and a few rustic fried potatoes, this simple meal will become your new favorite as it has been for my family and friends who have enjoyed this dish time and time again. It even works well for when you go camping as it only requires a few ingredients and everyone knows, the best fish comes straight out of the water to the pan. All about dill
Originally from the area surrounding South Russia, the dill plant(Anethum graveolens) carries a flavor that most of us are used to tasting in pickles. In this recipe though, it adds a nice tasty zing to a summertime staple. Combined with the hints of garlic and onion powder it adds just the right tang to make this meal one of your family's favorite simple meals. Fried catfish like you've never had and so simple even mom wouldn't mind making it!

Ingredients
- 1 lb fresh catfish fillets
- 1 egg
- 1 cup flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon dill weed(NOT SEEDS)
- 1/4 cup vegetable oil
- 3 tablespoons butter
- 2 tablespoons water
Instructions
- 1) Start of by heating the oil and butter in a large heavy pan, preferably cast iron.
- 2) In a large bowl whip together eggs and water to create an egg wash for the fillets.
- 3) In a separate bowl, combine flour, garlic and onion powders, and the fresh dill.
- 4)Dredge the fillets in the egg wash, then the flour and spice mixture making sure to coat every possible bit of the fish.
- 5)Add to your pan and fry until golden brown, flip and repeat for all fillets.

If you don't like fresh fish because the flavor is a bit stronger, let the fillets sit overnight in a solution of 1 tablespoon of salt per one cup of water in your fridge, it will make the flavor milder, allowing even finicky fish eaters to enjoy this meal!
